Industrial Boba & Tapioca Pearl Manufacturing: High-Viscosity Starch Processing
Industrial tapioca pearl and boba manufacturing guide: Learn viscosity control, starch gelatinization, extrusion, and vacuum packing using ARCO Tapioca Flour.
A complete industrial manufacturing protocol for producing premium bouncy, chewy (QQ) boba pearls from pure single-origin tapioca starch, detailing partial pre-gelatinization, pelletizing, and vacuum preservation.
Commercial Formula Ingredients
Scaled Batch- ARCO Tapioca Flour (High Peak Viscosity)70.0 kg (Single-origin cassava starch)
- Deionized / Filtered Hot Water (95°C / 203°F)28.0 kg
- Dark Muscovado / Brown Sugar Caramel Syrup12.0 kg
- Food-Grade Sodium Carboxymethyl Cellulose (CMC)0.4 kg
- Natural Caramel Color Class IV0.6 kg
Production & Culinary Method
Thermal Pre-Gelatinization Phase (The Binder)
In a jacketed steam mixer, combine 10% of the total ARCO Tapioca Flour (7.0 kg) with the hot water (28.0 kg), caramel syrup, and colorant. Heat while stirring continuously until starch reaches 75°C (167°F) and forms a clear, glossy, highly viscous elastomeric gel. This pre-gelatinized slurry acts as the cohesive binding agent.
Cold-Feed Secondary Compounding
Transfer the hot viscous slurry into a high-shear sigma blade mixer. Gradually feed the remaining 63.0 kg of raw ARCO Tapioca Flour. Compound for 6 minutes until an elastic, non-sticky dough forms with a moisture content of exactly 32% to 34%.
Extrusion and Spherical Pelletizing
Feed the compounded dough into an industrial rotary boba forming and cutting machine. The dough ropes are extruded and sliced into uniform 8.5mm cylindrical pellets, which immediately tumble through the rotational rounding drum to create spheres.
Flash Surface Steaming & Pre-Drying
Convey the formed pearls through a short continuous steam tunnel (90 seconds at 100°C) to flash-set the outer starch skin. Immediately convey through a fluidized-bed cooler to bring core temperature below 25°C.
MAP / Vacuum Packaging and Shelf Stabilization
Weigh into 3 kg heavy barrier pouches with oxygen absorbers or nitrogen flush (Modified Atmosphere Packaging). Seal hermetically. Uncooked commercial pearls remain shelf stable at ambient warehouse temperature for 9 to 12 months.
