Production & Culinary Method
Hydration and Hydrocolloid Gel Network Formation
In your commercial spiral mixer, combine the tempered water (40°C) with the psyllium husk powder and cane sugar. Mix on low speed for 90 seconds until a thick, uniform mucilage gel forms. This pseudo-gluten matrix provides the elastic scaffolding that traps carbon dioxide during proofing.
Starch and Flour Dry Pre-Blending
Sift ARCO Tapioca Flour together with the grain flour and potato starch. Tapioca flour provides lower gelatinization temperature (62°C–68°C) than corn starch, giving an early rise boost before oven crust sets.
Commercial Batch Emulsification and Mixing
Add the sifted flour-starch blend, instant dry yeast, and liquid eggs into the hydrated gel. Mix on speed 1 for 3 minutes, then stream in the oil and fine sea salt. Increase to speed 2 for 4 minutes until a smooth, batter-dough consistency is achieved (target dough temperature: 24°C–26°C / 75°F–78°F).
Portioning and Commercial Proofing
Deposit dough immediately into silicone-greased commercial loaf pans (850g per standard 2 lb pullman pan). Transfer to a proof box set at 95°F (35°C) and 80% relative humidity. Proof for 45 to 55 minutes until dough crowns 0.5 inches above pan rim.
Steam-Injected Deck / Rack Baking
Bake at 375°F (190°C) with an initial 10-second steam burst. Bake for 35 to 40 minutes until internal probe thermometer registers 208°F–210°F (98°C). Depan immediately onto wire cooling racks to prevent condensation at loaf base.
