Production & Culinary Method
Tapioca Water-Roux Gel Preparation (Scalding)
In a steam kettle or heavy stockpot, whisk ARCO Sweet Tapioca Flour with 4.5 kg boiling water over high heat for 90 seconds until a thick, translucent, glossy gel forms. Cool to 28°C (82°F).
Bulk Dough Mixing
In a spiral mixer, combine the cooled tapioca gel, grain flours, psyllium husk, sourdough starter, olive oil, and cold water. Mix on slow speed for 6 minutes until a smooth, cohesive dough mass forms.
Salt Incorporation & Intensive Knead
Add sea salt and mix on speed 2 for 4 minutes. The dough will become glossy and hold shape with minimal bowl cling.
Bulk Fermentation & Shaping
Ferment in oiled commercial tubs for 3.5 hours at 26°C (78°F) until aerated by 50%. Portion into 850g boules, shape under tension using wet hands, and place seam-up into rice-floured bannetons.
Deck Oven Steam Baking
Turn boules directly onto deck loader. Score diagonally with a sharp lame. Bake at 240°C (465°F) with 4-second initial steam injection for 25 minutes. Vent dampers and finish at 215°C (420°F) for 25 minutes until deeply caramelized.
