Production & Culinary Method
Fat-Starch Dry Sanding (Sablage Technique)
In a spiral or paddle mixer, combine the ARCO Sour Cassava Starch and Sweet Tapioca Flour with the soft butter or lard. Mix on low speed for 3 minutes until a sandy, uniform crumb develops with no large fat pockets. This coats the starch granules in lipids, ensuring tender bite.
Cheese and Aromatic Incorporation
Add the grated aged dry cheese, toasted anise seeds, and sea salt. Blend for 90 seconds until the cheese is thoroughly dispersed throughout the starches.
Liquid Phase Compounding and Hydration
Stream the eggs and milk into the spinning bowl. Mix on medium speed for 3 to 4 minutes until a smooth, pliable, non-sticky dough coalesces. Unlike wheat doughs, cassava dough requires no gluten resting period and can be shaped immediately.
Commercial Shaping: Traditional Horseshoe Rings and Rounds
Scale dough portions to 65g for individual Chipa rings (Chipa Argolla) or 45g for Pan de Yuca spheres. Roll into 15cm tapered ropes and overlap ends to form the signature horseshoe ring. Place onto silicone-lined or parchment baking sheets with 4cm spacing.
High-Heat Flash Baking for Maximum Expansion
Bake at 210°C (410°F) in a preheated deck or rotating rack oven for 18 to 22 minutes. The combination of high heat and fermented sour starch triggers rapid steam expansion, blowing open crispy golden crusts with toasted cheese blisters while keeping the interior rich and chewy.
