• Whole Cassava Flour2.5 kg
• Olive Oil & Warm Water5.5 kg
• Sea Salt & Crushed Oregano120 g

Production & Culinary Method

Hot Dough Mixing

Combine flours and seasonings in mixer. Add hot water (85\u00b0C) and oil. Mix on speed 2 for 3 minutes until smooth dough forms.

Fast Sheeting & Rolling

Roll into 75g rounds (3mm thickness) on sheeter or by hand.

High-Heat Tandoor / Pizza Oven Flash Bake

Bake on stone hearth at 280\u00b0C (535\u00b0F) for 60 seconds per side until ballooning with char blisters.
